Bear Garlic

Bear Garlic

Yes, Virginia, the wild garlic is sprouting.
Wild garlic (Allium ursinum – known as ramsons, buckrams, wild garlic, broad-leaved garlic, wood garlic, bear leek or bear's garlic, according to Wikipedia) is common across Europe. It is an essential part of early spring, being used as a 'spring tonic' in salads, soups, cheese spreads. Here is a wild field in Vienna's Lobau park. Just don't confuse it with Lilly of the Valley, which is poison.
